Spring Review

springreviewIt’s time for a Spring Review since beginning my blog in 2010. I’ve written more than 300 entries and wanted to share the best with you. Because of instantaneous access to one another via the Internet, the “world’s table” is now on public view. It is my goal, then, as a journalist, chef, author, restaurant consultant and food trends junkie, to help set the table with decades of perspective. When Vladimir Nabokov got around to writing his memoir, he called it “Speak, Memory.”  When writing my blog, I issue a similar command to myself:  “Taste, Memory!” I seek ways to connect the reader emotionally to his or her own gastronomic wavelength. Just as Anna Quindlen writes about her keen observations about life – tying together politics, family, and one’s inner experience, often with whimsy -- I have written my voice into daily, and weekly, connections to food, dining, cooking, history, biography and memoir. Each entry is a deliberate serving of the past, present and future – whether connecting the uprising in Egypt to my respect for Naguib Mafouz and my fondness for Egyptian cooking (with a contemporary photo of a young man preparing an ancient dish of ful mudammas); or experiencing the soul of Philadelphia-chef Marc Vetri through his singular approach to food and cooking and told his story by deeming him a “culinary bodhisattva.” A posting about “white carrots” informs the misinformed (which at times can be most of us), with an observation backed up with a bit of history, some speculation, and a few recipes to make the point. Included is a mesmerizing photo of carrots.

I believe that a younger generation of “food passionistas” – a term I coined for the group of dedicated, enthusiastic, and obsessively curious types about the world of food, chefs, and cooking – are in need of less hype, and more information, in an accessible  way. Inspired by the daily experiences of life in my kitchen, life in other people’s kitchens, learning at the hands of some of the industry’s most influential tastemakers, the purpose of my blog is not to attract advertisers or lure masses of readers; rather, it is an intimate, highly personal, often funny view of the world of food. Every blog posting puts my readers in-the-know about something timely. As a bonus, there’s always a “goody bag” in which one finds original recipes, ways to use new ingredients, food and wine pairing ideas, tips for entertaining, news about the coolest chefs and hottest restaurants. Or something more personal – a taste experience (ever try bitter chocolate, Parmigiano-Reggiano and sweet red grapes?); a mind stimulant (what about making marmalade from carrots?), or a new technique (like my deconstructed “wined-and-brined turkey,” or making cream cheese via “drip irrigation”).

Cooking is not merely about measurement and temperature, and the culinary world is not merely about gastronomy or nutrition. Food has deep historic and emotional resonances, and profound historical connections -- think about “feast” or “famine” or “bread riots.”

Food is familial and simultaneously social: We break bread together and then divide the world into pig-eaters or pig-shunners.

When one writes well about food, all these factors come into play, consciously or not. One should know that The Gleaners in Millet’s famous painting reach backward historically to biblical injunctions not to harvest to the corners of the field, but to leave food for the poor. One should know that without the discovery of the Americas, there would be no tomatoes in Naples, no paprika in Budapest, no chocolate in Zurich. One should know something about why certain foods connect to certain religious festivals – why, for example, we serve lamb at Easter and also at Passover, and why both “feasts” relate to activities around the table.

What my mother cooked for the her family is different from what my readers’ mothers did then or do today, but they all set standards for how we view not just what’s on our plate, but how we will relate to a larger world – one in which even the present seems to vaporize in an instant.

Day 7: A Radically Simple Countdown to Christmas

radicchioIn less than 18 minutes you can have a gorgeous fish dish that is worthy of the season. You might even consider it for your "seven fishes" dinner. The idea of roasting cod at such a high temperature was inspired by Shirley Corriher, scientist, chef, and author of the encyclopedic books, BakeWise and CookWise. I've added her felicitous pairing of buttery macadamia nuts and added my own wilted radicchio caressed with lemon. The combo is also great on sauteed chicken breasts. You might want to serve it with wild rice which I always enjoy during the holidays or fill your kitchen with Mediterranean flavors and make Bay-Smoked Potatoes (recipes below.) 'Tis the season. 500-Degree Cod with Macadamia Butter & Radicchio

4 thick cod fillets, 7 ounces each 1 cup unsalted macadamia nuts, about 3 ounces 1 medium-large head radicchio, about 8 ounces 7 tablespoons unsalted butter 1 lemon 1/3 cup coarsely chopped fresh flat-leaf parsley

Preheat the oven to 500 degrees. Season the fish with salt and pepper; place on a rimmed baking sheet. Roast for 6 to 7 minutes, until just firm. Meanwhile, chop the nuts and julienne the radicchio. Melt the butter in a large skillet. Add the nuts and cook over high heat, stirring constantly until browned, 2 minutes. Add the radicchio and cook until soft, 2 minutes. Add salt and pepper. Transfer the fish to 4 warm plates. Spoon the nut mixture on top. Top with grated lemon zest, a little lemon juice, and parsley. Serve immediately. Serves 4 Bay-Smoked Potatoes 1-1/2 pounds very small white new potatoes 3 tablespoons extra-virgin olive oil 12 dried California bay leaves

Preheat the oven to 400 degrees. Wash and scrub the potatoes; dry well. Do not peel. Toss with the oil and 2 teaspoons kosher salt. Distribute the bay leaves in a heavy ovenproof covered saute pan. Arrange the potatoes on top of the bay leaves in a single layer. Cover tightly with foil or a cover. Bake for 55 minutes to 1 hours, until the potatoes are soft and wrinkled. Transfer the potatoes and bay leaves to a platter. Drizzle with additional olive oil and sprinkle with salt and pepper. Serves 4 or more

Day 6: A Radically Simple Countdown to Christmas

12-21-2013 03;58;28PMWhen we think about main courses, it is generally dinner that comes to mind. But a main course for Christmas morning is fun to consider. A great idea is to make a breakfast strata: Layers of bread, prosciutto, feta, provolone and spinach, that can be assembled the night before and baked while you open presents. The striations of ingredients soak up the egg-and-milk base. Baked for 1 hour, the result is custardy, rich, and quiche-like. Best eaten in your pajamas while sipping winter mimosas -- made with tangerine juice and prosecco topped with pomegranate seeds. Cheese Strata with Prosciutto, Basil & Spinach

3-1/2 tablespoons unsalted butter 16 slices firm white bread, crusts removed 8 ounces thinly sliced prosciutto 8 ounces feta cheese, crumbled 4 ounces provolone cheese, shredded 1/4 cup finely minced scallions, white and green parts 4 ounces fresh baby spinach 1/2 cup finely julienned fresh basil 5 extra-large eggs 2 cups half-and-half 1/2 teaspoon Sriracha or hot sauce

Butter a 12-x-7 inch glass or ceramic dish with 1/2 tablespoon of the butter. Cover the bottom with 6 slices of bread, plus 1 slice cut in half to fill the spaces. Evenly cover the bread with half the prosciutto. Sprinkle with half of the feta, provolone, scallions, spinach, and basil. Repeat to make a second layer. Cut the remaining 2 bread slices into 1/4-inch cubes; scatter over the top. Beat together the eggs, half-and-half, and hot sauce. Pour over the strata; press down firmly with a spatula. Melt the remaining 3 tablespoons butter and drizzle over the top.  Cover; refrigerate 5 hours or overnight. Preheat the oven to 375 degrees. Uncover and bake 1 hour, until golden. Serves 8

Day 5: Radically Simple Countdown to Christmas

12-20-2013 02;50;42PMThis is one of the simplest, most festive dishes I know. It can be prepped and cooked in less than one hour yet looks like you've been fussing all day. This turkey roast is nothing more than a boned breast half, flattened slightly, so that it can be filled, rolled and tied. Prosciutto, fresh sage, and prunes perfume the dish and feel like Christmas to me. Be sure to serve it with a bowl of my (now famous) sweet potato puree whirled with fresh ginger and orange. A grand cru Beaujolais would be just the thing to drink. Rolled-and-Tied Turkey Roast with Prosciutto, Prunes & Sage 2-1/2 pound turkey roast (boned half-breast, skin on) 4 ounces thinly sliced prosciutto 10 large pitted prunes 1/4 cup pine nuts 12 large fresh sage leaves 12 medium-large shallots, peeled 3 tablespoons extra-virgin olive oil 1 cup chicken broth 1/2 cup dry white wine 1 tablespoon unsalted butter

Preheat the oven to 400 degrees. Using a mallet, flatten the turkey (skin side down) to 1-inch thickness. Cover evenly with overlapping slices of prosciutto. Arrange the prunes in a tight row down the center. Top with pine nuts and make a row of 6 sage leaves on top. Roll up tightly. Season with salt and pepper. Tie with string at 1-inch intervals and tuck 6 sage leaves under the string. Place the turkey and shallots in a small roasting pan. Drizzle with the oil. Roast 45 minutes until cooked through but still moist. Transfer the turkey and shallots to a board and tent with foil. Pour the broth and wine into the pan. Place on the stovetop and boil, scraping up browned bits, until syrupy, 3 minutes. Strain into a saucepan. Whisk in the butter and cook 1 minute.  Remove string from the turkey, thickly slice. Serve with the shallots and pan sauce. Serves 6

Sweet Potato Puree with Fresh Ginger & Orange This is fat-free but tastes very rich all the same. For a bit more intrigue, spice it up with a pinch of ground cumin, ground coriander, ground cardamom -- or all three.

4 large sweet potatoes, about 3 pounds 2 juice oranges 3-inch piece fresh ginger

Scrub the potatoes but do not peel. Place in a large pot with water to cover. Bring to a rapid boil, then reduce heat to medium. Cook 50 minutes or until very soft. Meanwhile, grate the zest of the oranges to get 1 teaspoon. Squeeze the orange to get 2/3 cup juice. Drain the potatoes and peel when cool enough to handle. Cut into large chunks and place in bowl of food processor.  Mince the ginger to get 1/4 cup. Add to the processor with the orange zest and juice. Process until very smooth. Transfer to a saucepan and reheat, stirring. Season with salt and pepper.  Serves 6

A Radically Simple Countdown to Christmas: Day 4

prime-rib-roast-beefHere's a wonderful, upscale recipe that is lovely for Christmas Day or New Year's Eve. The editors at Gourmet magazine once said this simple roast was one of the best they had ever tasted. It is "cured" in the same way that fresh salmon is for gravlax, literally buried in a mixture of coarse salt, sugar, fresh dill and cracked black pepper.  It is radically simple to prepare and radically delicious served with a silky potato puree and roasted winter vegetables. Open a bottle of full-bodied red burgundy or syrah.  The next day: Serve the world's best roast beef sandwiches topped with a horseradish sauce made from crème fraîche, white horseradish, and a splash of sherry. 1/4 cup kosher salt 3 tablespoons sugar 1-1/2 teaspoons coarsely cracked black pepper 3-1/2-pound boneless rib roast, rolled and tied 1 cup finely chopped fresh dill

Stir together the salt, sugar, and pepper in a small bowl; rub all over the beef. Put the dill over the salt mixture. Wrap tightly in plastic wrap. Make a small hole in the bottom of the plastic so that any accumulated liquid can drain. Place in a small roasting pan and weigh down with a baking sheet topped with a few large heavy cans.  Refrigerate 24 hours, pouring off liquid from time to time. Unwrap the beef; let sit at room temperature 30 minutes. Preheat the oven to 400 degrees. Scrape the coating off the beef and pat dry with paper towels. Place in a roasting pan. Roast in the middle of the oven 1-1/4 hours, until an instant-read thermometer registers 130 degrees for medium-rare. Transfer to a cutting board and tent with foil; let rest 15 minutes. Carve as desired. Serves 8

Day 2: Lamb Shanks Provençal with Cabernet & Rosemary

lambLamb shanks are a fabulous way to feed your guests during the holidays. You can prepare the recipe one to two days in advance allowing the flavors, and textures, to deepen. Just yesterday, a colleague told me she made this recipe, tossed the lusty leftover sauce with basmati rice, and ate it in bed while reading the rest of the cookbook. She then decided to make her entire New Year's Day menu from Radically Simple. (Last year she used the wonderful Jerusalem cookbook.)  I like to serve this with creamy polenta (and open a bottle of Barolo) or with a rich potato gratin layered with Gruyere (and raid our cellar for an old Côtes du Rhône.)  For the Christmas table I poach tiny kumquats in simple syrup until they collapse: They make a festive accompaniment and taste amazing with the lamb. Lamb Shanks Provençal with Cabernet & Rosemary This is nice and easy for a complicated-sounding dish. I simplify the process by quickly searing the seasoned shanks under the broiler. The lusty flavors come from dried porcini mushrooms and herbes de Provence. At the last minute, I dust the hot dish with freshly grated orange zest -- the aroma is wonderful.

6 tablespoons olive oil 6 large lamb shanks, 12 to 14 ounces each 2-1/2 cups chopped leeks, white and green parts 6 large cloves garlic, finely chopped 2-1/2 cup Cabernet sauvignon 1 cup canned crushed tomatoes with puree 1/2 ounce dried porcini mushrooms 1-1/2 tablespoons herbes de Provence 1 pound slender carrots, peeled and cut into 1/4 inch batons 1 tablespoon arrowroot

Preheat the broiler. Rub the lamb with 3 tablespoons oil and season with salt and pepper. Place on a broiler pan; brown several minutes on each side. Wash leeks and pat dry. Heat the remaining 3 tablespoon oil in an 8-quart Dutch oven. Add the leeks and garlic; cook over high heat until softened, 5 minutes. Add the shanks, wine, tomatoes, mushrooms, and herbes de Provence. Stir to coat. Bring to a boil. Reduce the heat, cover, and simmer 1 hour. Add the carrots, cover, and cook 30 minutes.  Uncover and simmer 15 minutes, until the lamb is tender. Spoon off the fat. Dissolve the arrowroot in 1 tablespoon water and stir into the sauce. Season to taste and simmer several minutes until the sauce thickens. Serves 6

Ten Radically Simple Days of Christmas

photo 2(2)Recipe countdown:  For the next 10 days I will share a main course recipe from Radically Simple: Brilliant Flavors with Breathtaking Ease. After all, it is the time of year where we all crave abundance without the burden. A nice holiday gift? A copy of the book from Amazon. For me, I'd love a fruitcake. Salmon & Mint in Crispy Grape Leaves This is an unusual fish dish for this time of the year but it's one of my favorites. Serve it on a mound of couscous mixed with orzo -- a new combo for me.  I invented it this morning!  Add a side dish of tiny roasted Brussels sprouts with a drizzle of walnut oil, sea salt and lemon zest.  What to drink?  Open a great bottle of pinot noir from Oregon or France, depending on your mood. This recipe is easily doubled, or tripled, and so is quite desirable for a holiday menu.

1/2 cup crème fraîche (I love the one from Vermont Creamery) 1 small garlic clove 4 thick salmon fillets, 7 ounces each, skin removed 2 medium bunches fresh mint 8 large grape leaves in brine, rinsed and dried 3 tablespoons olive oil

Preheat the oven to 450 degrees. Mix the crème fraîche with the garlic, pushed through a press. Add salt to taste. Season the fish with salt and pepper. Top each fillet with 6 mint leaves. Wrap each piece of fish tightly in 2 overlapping grape leaves, tucking in the ends as you go. Heat the oil in a large nonstick skillet. Add the packets and cook over high heat until crispy, 2 minutes on each side. Transfer the fish to a rimmed baking sheet and scatter with mint sprigs. Bake 8 minutes, until the fish is just firm. Serve with the crème fraîche and crispy mint. Drizzle with additional oil, if desired. Serves 4

Cauliflower Vichyssoise with Chive Flowers

The chive flowers are blooming once again which means it's time to make my one of my favorite warm-weather soups:  Cauliflower Vichyssoise with Chive Flowers (and parsley oil). You may be astounded to know that the beautiful soup in the photo below is made with only six ingredients.  Four for the soup; two for the parsley oil. This soup is classically made from potatoes and leeks, both the chive leaves (straws) are used and the edible flowers pulled apart.  It is a dish of many virtues and healthy as can be. I saw some lovely crimson rhubarb at the market, too.  Look here tomorrow for radically simple ways to prepare it. Have a meaningful Memorial Day.

 

Cauliflower Vichyssoise with Chive Flowers (adapted from Radically Simple) This more healthful riff on classic vichyssoise is still luxuriously suave.  For a stunning presentation, blanch a bunch of parsley and puree in a blender with 2 tablespoons olive oil, 1/4 cup water and salt; add a swirl to each serving to dance on the white velvet background.

2-1/2 pound cauliflower, or 1-3/4 pounds florets 2 large leeks 1 cup light cream 1 bunch chives with chive flowers Break the cauliflower into small pieces and put in a 4-quart pot.  Add 5 cups water (water will not cover the cauliflower) and 2 teaspoons salt.  Chop the white parts of the leeks to get 1-1/2 cups.  Wash well; add to the pot.  Bring to a rapid boil; reduce the heat to medium.  Cover and cook until the vegetables are very soft, about 24 minutes.  Cool 5 minutes.  In 2 batches, puree in a food processor until ultra smooth, adding 1/2 cup cream to each batch.  Transfer to a bowl; add salt and pepper.  Cover; refrigerate until very cold.  Add water or additional cream if too thick.  Garnish with chopped chives and flowers, and optional parsley oil.  Serves 6

Radically Simple Gets Top Honors

In conjunction with the 25th anniversary of the country's most beloved food magazine, the editors at Cooking Light have established the Cooking Light Cookbook Awards. Beginning with the November 2011 issue (on newsstands now), the 100 MOST IMPORTANT COOKBOOKS of the past 25 years were chosen. Each month will unveil the top picks across 15 categories. In the first category, General Cookbooks, only nine selections were made. I am pleased as punch that Radically Simple: Brilliant Flavors with Breathtaking Ease was one of them. According to Cooking Light's editorial team, more than 50,000 cookbooks will have been published in the U.S. in past quarter-century. Their observation is that, "Cooks love books for their ability to inspire, entertain, excite, soothe, teach -- and for their beauty as physical objects. The best are thrilling, whether they're eye-opening explorations of a single subject, seminal overviews, or beautiful obsessions." Many of the ones chosen are all of the above.

The CL team looked at best-seller and awards lists, and talked to editors, authors, and experts. For consideration, books had to be published in the U.S. since 1987 and be in print or easily available on line. "Winners emerged after passionate debate about voice, originality, beauty, importance, and a clear mission or vision." And yes, they went on to say, "We tested the recipes."

Other choices in the category include:  Martha Stewart's Cooking School (Lessons and Recipes for the Home Cook); The Essential New York Times Cookbook by Amanda Hesser (which is on my shelf next to Craig Claiborne's cherished blue-linen bound edition written in 1961); Real Cooking by Nigel Slater (an original voice if there ever was one); Gourmet Today (edited by Ruth Reichl); Cook with Jamie:  My Guide to Making You A Better Cook, by Jamie Oliver; The New Best Recipe (by the editors of Cook's Illustrated); Mark Bittman's How to Cook Everything; and Ad Hoc at Home by Thomas Keller.

In addition to the personal and insightful write-ups of each book, are a few specially selected recipes, which makes this double issue of Cooking Light, especially magical.

Of Radically Simple, here are some highlights: "This is one of those books that make you want to leap up and start cooking." "This book importantly elevates the quick-and-simple concept to a new level, becoming a benchmark."

French Meal as National Treasure

Something's in the air. Perhaps a whiff of French cooking. This month's issue of Food & Wine magazine is devoted to the new French Classics and the New York Times' food section featured the cookbook "La Cuisine de la Republique" with recipes from members of the French National Assembly. The book, authored by deputy Francoise Branget from the center-right of Sarkozy's party, was the finishing touch, or celebration really, of her campaign to unite the Left and Right in a national cause:  the promotion of French gastronomy.  And I quote (from the article by Elaine Sciolino), "Food is so much a part of France's identity that the government led a successful campaign last year to win United Nations recognition of the French meal as a national treasure."  Can Italy be far behind? That said, many years ago I wrote an article called "So What's a French Restaurant, Anyway" for the Daily News.  I will try to locate it but I remember how the semaphores of French cuisine were slowly vaporizing like the molecules of a slowly simmering stock. And yet today, there is a trickle of French-i-ness afoot. The prototypical La Mangeoire, under the direction of 4-star cooking maestro Christian Delouvrier has just received a face lift, as has the four-star Le Bernardin, now designed by Bentel & Bentel. The original look by uber-designer Phil George, certainly stood the test of time and helped create the ambiance that became part of the restaurant's gestalt. I understand Mr. George just dined at Le Bernardin and gave a nod of approval to the new surroundings. He also said the food was very, very good, indeed.

Not long ago, we had the pleasure of dining at La Mangeoire and were greeted by a gentler, happier chef who no longer had to live up the exalted expectations of four-star dining.  We were so pleased to eat mussels, great frites, and calves liver and be enchanted by chocolate mousse. Nowadays, I see the "comeback crepe," and on a bus, just today, passed by the ancient Les Sans Culottes from New York's theatre district, now on the East side. I never imagined the simple French concept could sustain itself all these years.

Although the "La Cuisine de la Republique" features some pretty remote recipes from little-known regions and lesser-known food stuffs (hare, pork head, and potatoes on a slice of pig skin), the sentiment that should unite our countries is sound.  "It is our national responsibility to cook and to eat well."  Viva la France.

To that end, I suggest you try my Almost-Confit Chicken from Radically Simple, or this radically simple cake "Gateau Creusois" from the New York Times.  I will be making it this weekend.  Might be nice with a pile of fresh raspberries or thinly sliced plums or peaches from the farmer's market. Not bad with a glass of cassis. Bon chance and bon appetit.

Gateau Creusois (adapted from Jean Auclais' in "La Cusine de la Republique and from the New York Times, 9/14/11)

1/4 cup all-purpose flour, plus more for flouring pan 1/2 cup confectioners sugar, plus more as needed pinch of salt 1/3 cup finely ground hazelnuts 3 large egg whites 3 tablespoons butter, melted and cooled oil for greasing pan

Preheat oven to 350 degrees.  Oil an 8-inch cake pan and dust with flour.  In a medium bowl, sift together 1/4 cup flour, 1/2 cup confectioners sugar and salt. Add hazelnuts and mix well. Using a mixer, whisk the egg whites until they form stiff peaks; do not overbeat. Pour the sifted mixture evenly over the egg whites. Using a rubber spatula, gently fold together once or twice.  Add the butter and continue to fold until just blended.  Scrape into the cake pan and smooth the surface. Bake until light golden, about 18 to 20 minutes.  Remove from heat and cool 10 minutes, then transfer cake from pan to a rack to finish cooling.  Before serving, sift confectioners sugar on top.  Serves 6

Recipe Day: Basil with Benefits

I was off and running do to volunteer work at Beth Israel Hospital (I will be working in the emergency room and on another unit as a "Pastoral Care" volunteer), and ran right through the Union Square farmer's market when I remembered my promise (a few days ago) to share some wonderful basil recipes with you. The market was abundant with piles of sweet corn and juicy peaches unwittingly waiting for an unexpected partner:  Ocimum basilicum. Below you will find a recipe for "green corn" -- in which boiled sweet corn gets rubbed with a fist full of fresh basil leaves and coarse salt, and a recipe for the quickest dessert imaginable, based on ripe peaches and a basil chiffonade. Both are adapted from Radically Simple and truly are. Not only does basil have a unique flavor profile (which most of us adore), it also has distinctive medicinal properties -- both anti-microbial and anti-fungal.  As Hippocrates once said, "Let food be our medicine, and medicine be our food," we are continually blessed, protected, cleansed, bolstered, buoyed and emboldened with inadvertent health benefits from the food we eat.  Basil's health-promoting factors are due mostly to their flavonoids and volatile oils which protect cell structures and chromosomes from radiation and oxygen-based damage. Basil is remarkably high in Vitamin K which is essential for bone building, heart protection, and in aiding blood clotting. Its vibrant essential oils make it an anti-bacterial and anti-inflammatory agent. All that, and its wondrous contribution to pesto!, may make this one of the world's most desirable herbs.

There are over 60 varieties of basil to choose from. But you can just begin with one. I grow it in my window box that hangs off my sunny kitchen window -- a fistful at a time.

"Green Corn" Rub steamy ears of fresh corn with fresh basil and you'll inhale a perfume that screams "Summer!"

6 large ears fresh sweet corn, shucked fistful of large fresh basil leaves 2 tablespoons unsalted butter, in small pieces 1 lime

Bring a large pot of salted water to a boil.  Add the corn, return to a boil, and cook 3 minutes.  Wash the basil and dry very well.  Sprinkle with kosher salt. Transfer the corn to a platter.  Rub each ear with salted basil leaves.  Dot with butter; squeeze lime juice on top.   Serves 6 Peaches with Sweet Basil This is a winning, and unexpected, combination of flavors.  Enjoy.

4 very ripe large peaches 1/2 cup peach schnapps, chilled 2 tablespoons wildflower honey 1/3 cup julienned fresh basil

Wash and dry the peaches.  Cut into thin wedges and place in a bowl.  Stir together the schnapps, honey, half the basil, and 1/4 cup ice water.  Pour over the peaches and stir.  Transfer to 4 wine glasses.  Scatter with the remaining basil.

A New Look at Basil

In the late 1970's, when curly parsley was not only the essential herb but the ubiquitous garnish, I remember my joy in the herbaceous perfume of fresh basil wafting through my cooking class in Florence, Italy. No one knew much about it then. Pesto had barely hit our shores and it was almost impossible to find in even the best supermarkets. Clearly things have changed and so it was exciting to be invited to be a guest on Martha Stewart's radio show "Everyday Food" the other day, to talk about basil and new things to do with it. Once upon a time, there was a serious issue of how to store it during the winter -- between layers of coarse salt, or suspended in olive oil and frozen, or whirled into pesto to use during the cold winter -- but thankfully, basil is now an essential herb, and ubiquitous garnish, and is available fresh all year long. During the course of the half-hour show, we talked about myriad new ways to use it, grow it, and discussed the different varieties available, from Thai basil, to holy basil, to chocolate, peppermint and pineapple basil. Sandy and I both agreed that it is the more generic "sweet basil" that has captured our hearts. The host of the show, Sandy Gluck, shared an idea for pureeing fresh basil into ricotta and using it as a base for bruschetta. My cheese-making buddy, Laurie Sandow, told me about a wonderful soda she read about using fresh basil, strawberries, balsamic vinegar and agave syrup. And in Radically Simple, there are a dozen hip recipes showing contemporary new ways to use it. And here is sampling of delicious ideas to get you started.

Wrap large shrimp in large basil leaves. Wrap tightly with  small strips of prosciutto. Saute in garlic olive oil.

Make fragrant basil butter: Process 1 stick sweet butter with ½ cup fresh basil leaves and a pinch of curry.

Swirl freshly prepared pesto into thick yogurt. Spread on warm grilled bread.

Grate yellow squash and zucchini on large holes of box grater. Saute in butter with lots of freshly chopped basil.

Cut a ½-inch-x-4 inch channel in thick swordfish steaks. Stuff with a stack of tightly-rolled basil leaves. Poach in olive oil.

Try basil mayonnaise: Process 1 cup homemade or store-bought mayonnaise with 1 cup basil, a clove of garlic and a few, optional, anchovy fillets.

Steep basil leaves in lemon vodka. Freeze.

Gently warm orange blossom honey. Add whole basil leaves. Stir and pour into mason jars.

Basil toasts: Bake ½-inch thick slices of baguette until crisp. Rub with a split garlic clove and fresh basil leaves until fragrant and “green”.

Morning snack: Spread lightly buttered toast with bitter orange marmalade. Sprinkle with a chiffonade of fresh basil.

Cut ripe peaches into thin wedges. Place in wine goblets. Splash with peach schnapps and julienned basil.

Strawberry-basil tea: Puree 1-pint strawberries with 8 basil leaves and sugar. Cover amply with boiling water. Steep 15 minutes. Strain into teacups.

Look for my basil-scrubbed toast, "green" corn, and many other basil recipes in the days to follow. Buy lots at your farmer's market this weekend and breathe deeply.

El Vero Gazpacho (or Gazpacho with Gerry!)

To my way of thinking, gazpacho is always lipstick red (chock full of the ripest tomatoes), jade green (Asian-style), or even bluish-purple (my playful take on a fruit soup made with blueberries and ginger.)  These can all be found in Radically Simple and they are a fabulous prelude to an end-of-summer meal.  But true gazpacho, according to Spanish food-and-wine maven, Gerry Dawes, has a kind of orange-red-coral hue.  Offered with a "lazy Susan" of garnishes -- fresh chopped tomatoes, red and green peppers, cucumbers, onion (or scallions -- not authentic), chopped egg, warm croutons, the base of the soup is rather smooth and made textural with these colorful add-ons.  Today, in Spain, says Gerry, "it has become a trend to add chopped Iberico ham" to the hit parade of toppings.  Over the Labor Day weekend we enjoyed the fruits of Gerry's labor, as he showed us step-by-step how to make gazpacho, then regaled us with an authentic paella laden with shrimp, squid, two kinds of chorizo, rice awash in homemade fish stock, peas, and peppers -- all cooked in a huge paella pan set atop an outdoor grill.  The goal (and trick) is to get the bottom of the rice to form a nice caramelized crust (socarrat), that is both desirable and delicious. Gerry did. You should see him in the kitchen:  the culinary equivalent of a matador. Gerry Dawes was deemed by the late James Michener, to be the rightful heir to scribe the sequel to Michener's Iberia.  Known by many to be one of the leading experts on Spain's gastronomic scene -- both past and present -- he is the recipient of Spain's prestigious Premio Nacional de Gastronomia (National Gastronomy Award) in 2003 and is a familiar figure on Spain's restaurant circuit.  But as food and wine is part of history and culture, Gerry's vast knowledge of Spain, and his beautiful writing style earned him that opportunity by Michener himself.  Gerry, however, is so busy entertaining friends, making gazpacho, and bringing famous chefs to Spain, that the reality of his novel still awaits.  Gerry has lived on-and-off in Spain for 30 years and his travel notebooks alone are worth stealing.  He was the first American journalist to write about Catalan star chef, Ferran Adria for FoodArts (they are now good friends).  According to Michael Batterberry, FoodArt's late beloved publisher and editor, "...That we were the first to introduce American readers to Ferran Adria in 1997 and have ever since continued to bring you a blow-by-blow narrative of Spain's riveting ferment is chiefly due to our Spanish correspondent, Gerry "Mr. Spain" Dawes, the messianic wine and food journalist raised in Southern Illinois and possessor of a self-accumulated doctorate in the Spanish Table."  Whew.  I couldn't have said it better.

So, it was Mr. Spain last weekend, who finally taught me the gospel-of-gazpacho.  No hot spices (the heat come from the garlic), the proper texture, the requisite color, and the most fabulous taste.   I took notes and you will find my approximation below.  His is the Gazpacho a la Sevilliana -- taught to him by his "Spanish mother" Maria Franco, the proprietress of Pension Santa Cruz located in the old Jewish quarter of Seville.  In the old days, it cost $1.00 a night and an extra .15 cents for a hot shower.  Gerry differentiated his Sevillana gazpacho from the more brick-colored, thicker, sauce-like salmorejo gazpachos of Córdoba, which are often served with strips of fried eggplant.

Gerry's Gazpacho Gerry says the base of gazpacho is primal -- water, vinegar, garlic and bread.

5 very large ripe tomatoes, cut into wedges 1-1/2 large cucumbers, peeled, seeded and chopped 1/4 cup vinegar (Gerry used 2 tablespoons white wine vinegar, 1 tablespoon sherry vinegar, and 1 tablespoon red wine vinegar) 4 ounces soft baguette, soaked in a bowl of 2 cups water for 20 minutes 1 cup chopped red peppers 1 cup chopped green peppers 1 cup chopped orange peppers 2 large cloves garlic 1/2 cup extra-virgin olive oiil

Process everything in the food processor until smooth, including the water from the soaking bread.  Strain into a large bowl.  Process the remaining solids until very smooth and add to soup.   Chill until very cold.  Add salt to taste.   Garnish with remaining cucumber, chopped, chopped tomatoes, chopped peppers, chopped egg, chopped onion, and warm croutons.  Serves 6 to 8

Summer Pasta with Smoked Salmon & Sweet Corn

Having a spontaneous dinner party this weekend? Here's another 10-minute pasta you can make using super-sweet corn from the farmer's market.  Made with fresh fettuccine that cooks up in minutes, this elegant, hassle-free dish might be just the thing to serve as your first course.  Follow with a side of bluefish resting upon a bed of thinly sliced tomatoes, onions and purple sage.  Just drizzle with extra-virgin olive oil and blast it in a very hot oven for 15 minutes.  For dessert? Uber-ripe peaches from the farmer's market bathing in red wine.  And some cookies, of course. Fettuccine with Smoked Salmon, Creme Fraiche & Sweet Corn If you like, you may also add some snippets of fresh basil or cilantro. A must:  Creme fraiche.

8 ounces fresh fettuccine 1 cup sweet yellow corn, freshly cut from the cob 4 ounces best-quality smoked salmon, thinly sliced 8 ounces creme fraiche 6 tablespoons freshly grated Parmigiano-Reggiano 1/4 cup finely minced fresh chives 1 large lemon

Bring a large pot of salted water to a boil.  Add the pasta and corn and cook 3 to 4 minutes, until tender.  Meanwhile, cut the salmon into 1/2-wide strips.  Drain the pasta well; shake dry. Immediately return the pasta to the warm pot.  Add the smoked salmon, creme fraiche, cheese, salt and pepper to taste.  Warm gently for 1 minute over low heat, but do not cook.  Stir in chives.  Transfer pasta to bowls.  Using a microplane, grate lemon zest on top and serve immediately.  Add snippets of basil or cilantro, if desired.  Serves 4

Linguine with Zucchini

Not only is this pasta dish fun to say, but it is delicious and wickedly simple to make. The rest of its title includes the summer words, "lemon zest & basil." Since it is made with fresh pasta (the kind you can buy), it can be made in 10 minutes, as I promised yesterday.  It is a favorite go-to summer supper for us at home -- often preceded by a Salad Caprese (but one where I swap watermelon for the tomatoes, goat cheese for the mozzarella, and cilantro for the basil!). The combination of flavors is divine, and the zucchini gets lightly floured and cooked until golden brown in olive oil. It would be very interesting to end this summer meal with another promised idea from our trip to Italy -- chocolate eggplant!  But I'm looking for my photos and trying to find a good recipe to share. Stay tuned. Linguine with Zucchini, Lemon Zest & Basil  (adapted from Radically Simple) When thin slices of lightly floured zucchini are fried then tossed with bits of crispy basil and showered with fragrant lemon zest (oh, how I long for the lemons of Capri!), you gets lots of complexity for something quite simple.

2 medium zucchini, trimmed 6 tablespoons olive oil 1 large clove garlic, peeled and smashed 1/4 cup Wondra flour 1/3 cup chopped fresh basil 12 ounces fresh linguine 1 large lemon 1/2 cup freshly grated Parmigiano-Reggiano

Bring a large pot of salted water to a boil. Slice the zucchini into thin rounds. Heat 3 tablespoons of the oil in a very large skillet. Add the garlic and discard the garlic when browned. Dust the zucchini with the flour. Add to the skillet and cook over high heat until dark golden and soft, about 6 minutes. Add the basil and cook 1 minute. Cook the pasta in the boiling water 3 minutes, or until tender.  Drain the pasta well and toss with the remaining 3 tablespoons oil. Spoon the zucchini and pan juices over the pasta.  Grate the zest of the lemon on top and squeeze a little juice over all.  Sprinkle with the cheese. Serves 4

10-Minute Summer Pastas

There is no better time of the year to take full advantage of nature's bounty and...good fresh pasta. There are several available on the market today.  However, I do long for Henry Lambert's ground-breaking concept -- launched in New York decades ago -- called "Pasta & Cheese." It was sensational to be able to go to a store featuring taleggio and gorgonzola (both rarities then) and revolutionary to encounter sheets of freshly made pasta that would be cut in front of you to your desired specs -- fettuccine, pappardelle, etc. I believe the first store was on the upper east side and opened right after I learned to make my own pasta in Italy -- the summer of 1978 -- when I began drying my own freshly-made pasta on broomstick handles perched atop two chairs in the kitchen of Gracie Mansion! Life was nothing short of discovery back then. It was a time of innocence, gleaming new pasta machines in home kitchens, and pesto madness. It was the delicious homemade Sicilian pesto that I had the other day at Arthur Schwartz's home, that made me remember my own version of  "pesto rosso" from Radically Simple: Brilliant Flavors with Breathtaking Ease. This pesto is unusual in that it is made with almonds and has fresh tomato in it. It hails from Trapani in Sicily and is known as pesto Trapanese. I hadn't made it in awhile and ran home to do so!  The secret, according to Arthur, was to use really good garlic. And I agree that it made all the difference in the world. He buys his at the Grand Army Plaza farmer's market on Saturday mornings. The Linguine with Pesto Rosso, below, is my take on this famous dish, here made with ingredients gathered from the four corners of my refrigerator. It would be lovely to serve with my salad of Shaved Fennel with Parmigiano & Hot Pepper -- to which I sometimes add tiny segments of fresh oranges.  It will put some sunshine into this gray summer day.

Linguine with Pesto Rosso

1 cup loosely packed fresh flat-leaf parsley 1 cup loosely packed fresh basil leaves 1/2 pint ripe grape tomatoes 1/3 cup extra-virgin olive oil 1/4 cup whole almonds (with skins) 1 medium garlic clove 1/3 cup freshly grated Parmigiano-Reggiano 2/3 cup freshly grated Pecorino Romano 12 ounces fresh linguine

Bring a large pot of salted water to a boil.  Combine the parsley, basil, tomatoes, oil, almonds, garlic and Parmesan in a food processor.  Add 1/3 cup of the pecorino and process until very smooth.  Add salt and pepper.  Transfer to a large bowl.  Cook the pasta in the boiling water for 3 minutes, or until tender.  Drain well and shake dry. Add the pasta to the pesto and toss thoroughly.  Sprinkle with the remaining pecorino.  Serves 4

Shaved Fennel with Parmigiano & Hot Pepper This is an unusual starter to a hefty meal or a nice side salad for a summer pasta dinner.  The little nubbins of cheese are unexpected.  Add fresh orange segments if you wish.

1 large fennel bulb, about 1-1/2 pounds 2 tablespoons extra-virgin olive oil 1 tablespoon white balsamic vinegar large pinch red pepper flakes 4-ounce piece Parmigiano-Reggiano 2 big handfuls baby arugula

Trim the feathery fronds from the fennel bulb; chop to get 1/4 cup and set aside.  Cut the fennel in half lengthwise and cut crosswise as thinly as possible.  Place in a bowl.  Add the oil, vinegar, pepper flakes, and salt.  Break the cheese into very small pieces; add to the salad and toss.  Stir in the arugula.  Scatter chopped fronds on top.  Serves 4

I Dream of Cooking with Ferran

Several weeks ago, I went to the premiere of a movie (that is soon to open at the Film Forum) called El Bulli: Cooking in Progress, about the life and times of cooking in the kitchen at El Bulli in northern Spain (in the Catalan province of Girona). El Bulli, and its maestro, Ferran Adrià, have been awarded the best restaurant in the world status five times (by the S. Pellegrino "World's 50 Best Restaurants" award) and as the 2010 "Chef of the Decade," respectively. After seeing the movie, remarkable in some ways as it was (sometimes repetitive in others), I decided that Adrià and I had nothing in common -- that his brilliance as an innovator in the orbit of molecular cuisine was truly part of his psyche and soul. It was a world that I dare not enter. That style of food, for me, sorely missed the swoon factor.  Never did it make me hunger.  Just curious.

Other chefs have also ventured there and have made big names for themselves -- Wylie Dufresne, Grant Achatz, and most spectacularly, Nathan Myhrvold (you must read this amazing article about him, written by the brilliant writer Jerry Adler -- in a recent issue of Smithsonian magazine.)  But an article in the New York Times Magazine two days ago, about the "real Ferran Adrià," in fact, did make me swoon, as did the simple recipes he shared.  According to Mark Bittman, the writer of the story, Ferran's "own preference (for food) lies in the realm of extremely simple fare." And it was surprising (if not heartening) to learn that Ferran's upcoming cookbook explores the realm of "cuisine simple" and "cuisine traditionelle" -- styles he warmly embraces and cooks for his staff. Ferran seems to love authenticity as much as the next guy, wavering between dishes that are radically simple (steamed mussels with garlic, parsley, flour!, and paprika) to others that have only three ingredients!  Those include the dishes of his favorite restaurants in the town of Roses (the next town over from El Bulli), that specialize in nothing more than "impeccable local shellfish, olive oil, (salt), and occasionally lemon. And like me, "he's in love with the transformation you can force on ingredients to make them change shape and form." I want to believe this reference was about simplicity and not the avant-garde cooking for which he has become known.

How I would love to go to Ferran's new "laboratorio" and create three-ingredient recipes side-by-side.  Or merely explore the realm of radical simplicity together. How could you not love a guy who grills bread, grates chocolate on top of it, then drizzles it with olive oil and salt?  Now that's my kind of cooking.

Bread With Chocolate and Olive Oil (From Ferran Adrià)

Time: 15 minutes

6 thick slices country-style bread (about 10 ounces total)

6 ounces bittersweet chocolate (preferably 60 percent cocoa), coarsely grated. (A Microplane is not essential, but it helps.)

1/4 cup olive oil

1/2 teaspoon sea salt.

1. Heat the oven to 325. Put the bread on a baking sheet and bake until golden brown on both sides, 5 to 7 minutes total. Spoon the chocolate over the toast in a thin, even layer. Drizzle the toast with the oil and sprinkle with the salt. Serve.

Yield: 6 servings.

Remembering Pesto

The first time I had pesto was in 1978 in Florence, Italy.  I was studying with cooking teacher Giuliano Bugialli, whose book "The Fine Art of Italian Cooking" (1977), informed my personal cooking style forever. My outlook on seasonality and simplicity was born that summer -- the summer of '78 as I remember it -- when I was chef to New York Mayor Ed Koch and lived at Gracie Mansion with Hizzoner.  It was the soft breeze that came through the windowed kitchen door on Guiliano's terrace that transfixed me silently and totally.  Overlooking an elegant side street in Florence, the perfume of basil wafted into the part of my brain that would, from then on, trigger memories of my collective trips to that town -- a "living museum" as I called it then. I was 24 and although I had traveled to Italy, France, Norway and other ports of call, it was the collision of food and culture, art and history made edible, that enamored me. I remember loving the protocol of an Italian meal, how boiled things were served with boiled things, and fried foods with other fried foods.  That you never changed the order of a meal, and that sitting down to eat was a cultural institution as important as almost any other.  I was struck with the orderliness and logic of pairing certain pasta shapes with particular sauces, and how differently fresh pasta was treated from dried pasta.  I loved learning that good canned tomatoes were the sine qua non of the Italian pantry and that one opted for lusty dried oregano instead of fresh.

But this morning I'm remembering pesto -- because the smell of fresh basil is wafting through my kitchen window as a morning offering from my window box.  I also look forward to walking the Union Square market this morning (after all, it's Wednesday) and thinking of that special time in my culinary journey.  I will remember drying freshly-made pasta over a broom handle that teetered upon two facing chairs, I will remember the slices of simply-fried eggplant splashed with vinegar and dotted with chopped garlic and that dreamy basil, I will remember the roast duck stuffed with pancetta, sage and juniper -- that is equally nice, I might add, made with basil.  And of course, there was pasta al pesto whenever you chose.  Moving into my own world of radical simplicity, this week I will slice fresh peaches, splash them with peach schnapps and stir in a bit of julienned basil; I will make scrubbed toast -- and grill thick slices of peasant bread, rub them with a cut clove of garlic, and a fistful of basil leaves that I will scrape along the nubby texture.  A drizzle of olive oil, coarse salt, and presto! -- the herbal equivalent of the tomato-scrubbed bread one would find in Barcelona. And I will do the same with ears of simply boiled corn, rub it with basil until perfumed and slightly green.  A little melted butter and...

The first restaurant that made pesto famous was a chic spot in Greenwich village owned and run by the wonderful Alfredo Viazzi.  Some of you may remember.

What to Buy at the Farmer's Market

One of life's greatest pleasures, anywhere in the world, is to go to a local farmer's market. My life straddles two of them -- the bustling Union Square market on Wednesday morning and the slightly more intimate market at Grand Army Plaza in Park Slope, Brooklyn on Saturday. At this time of the year, it is as though someone flipped the switch as the smells, energy and variety of nature's bounty deepens and expands. The color of "fresh" seems to pulsate and I tenderly look for what was not there the week before.  The semaphores of the season alert me as to what to cook for dinner. I like the idea of being a seasonalist -- and fondly remember the excitement generated around the idea of cuisine du marché (cooking from the market) first popularized by Paul Bocuse in 1976 with his book "La Cuisine du Marché. But several years earlier, the American cooking teacher Perla Meyers, wrote a book we all loved (even before most of us had farmer's markets in our own zip codes!) called "The Seasonal Kitchen" in 1973!

So... this coming week, consider fleshy purple scallions (a wonderful garnish or lovely to sauté with peas), fresh peas!, petit ripe strawberries (small compared to what you get in the supermarket), fresh chamomile! (I infuse it in vodka), nasturtium flowers and leaves (superb in any salad), six different colors of slender carrots, crisp asparagus, and from Windfall Farms (my favorite place), flowering pea shoots (with a tiny purple flower) that I chop up and throw in consommé (Chinese style) or lightly sauté with garlic as a bed for roasted halibut. There are radishes for spreading with sweet butter and roasting and serving with one of the local nutty, sharp cheeses or creamier goat cheeses. I slipped the peas from several pounds of fresh peas today. It was quite meditative. I thought about the lecture I went to several weeks ago at the World Science Festival in New York about the "brain and the articulate hand." This is what I thought about, pod by pod.

Do consider making my Seared Scallops on Sweet Pea Puree this weekend -- and make it with fresh peas. It comes from Radically Simple and it is. Or try my Campanelle with Caramelized Onions, Peas & Mint. There's lots of mint at the market, too! End with a basket full of berries topped with sweetened crème fraiche and snippets of lemon verbena. Campanelle with Caramelized Onions, Peas & Mint This is an exuberant way to dress up any short pasta.  Thai fish sauce adds a does of umami...and intrigue.  Use fresh peas!

4 large yellow onions, about 1-1/2 pounds 1/3 cup extra-virgin olive oil 12 ounces uncooked campanelle or penne rigati 1 cup shelled fresh peas 3 tablespoons white balsamic vinegar 1 tablespoon Thai fish sauce 1 cup coarsely chopped fresh mint 1/3 cup freshly-grated Parmigiano-Reggiano, plus a 2-ounce piece

Bring a large pot of salted water to a boil.  Cut the onions in half through the roots.  Place cut side down on a board. Thinly slice lengthwise (not into half-circles.) Heat the oil in a very large skillet.  Add the onions and cook over high heat, stirring, until dark brown, about 15 minutes.  Meanwhile, cook the pasta in boiling water for 5 minutes.  Add the peas and cook 7 minutes longer.  Drain well, saving 1/2 cup cooking liquid.  Add the vinegar and fish sauce to the onions and cook 2 minutes.  Add the drained pasta and peas, reserved cooking water, mint and grated cheese.  Cook 2 minutes until hot.  Add salt and pepper.  Serve in warm bowl, use a vegetable peeler to shave shards of cheese on top.  Serves 4 to 6
